Mititei (tiny little ones) are THE classic Romanian grill fare. They’re fluffy skinless spiced sausages, grilled and served hot with mustard. 



  1. Ground meat. Use a combination of beef, pork, and lamb for the best flavor, but any meat will do. 
  2. Salt and pepper to taste.
  3. Ground coriander
  4. Ground cumin
  5. Dried thyme
  6. A few crushed garlic cloves – the more, the better to ward off vampires
  7. A teaspoon of baking soda
  8. A bit of sparkling water. 

Dissolve the baking powder in the sparkling water and mix everything together. 

Wet your hands and shape the meat into sausages, about four inches long and one inch thick. Let them rest in the fridge for a few hours. 

Grill on a scorching grill for 3-4 minutes on each side until they’re golden brown with dark grill marks. Serve with a bowl of mustard to dip in and some crusty fresh bread. Bon Appetit!
